The IPTC (International Press Télécommunications Council) data are data which we must add by hand : keywords, copyright, legend, category, city, country...
Let's see how Aperture presents the IPTC data. First, we open the inspector (Window Menu and Show the inspectors) :

Here are all the IPTC data which can be added by Aperture to your photos. Click on the IPTC button which is located at the bottom of the Metadata window, then check the desired checkboxes :



Of course, you can uncheck what you don't need. You just need to click on the (-) button on the right of the data :

To switch from a data type to another one, you just need to click on the "Metadata" bar :
